bossinet de cansalada / cansalada aviada

Catalan to English Other Cooking / Culinary Coloquial terms - cooking
This is two terms taken from an interview with a woman describing food eaten at Christmas...I am unsure about "bossinet" and "aviada" in these contexts.

Examples:
fas el cargol amb un bossinet de cansalada o de... un bossinet de salsitxa i está de muerte
feien la salsa de cargols que és amb tomàquet, salsitxa, cansalada aviada, no bacon,

I imagine this is what they meant.

You can call it bacon, but I am just giving you an extra option as "cansalada" means normally salt pork or salt bacon, and not the smoked one (which yes, we tend to call bacon, as in your text, specifying "no bacon"),

This "aviada" word is curiously something my granny used to say, and to her it meant with lots of infiltrated fat, a sort of deformation of "entrevirada" or streaked with intramuscular fat. The link underneath discusses this term and a lot of things about the cansalada, and maybe it is useful for you.

Bossinet means small pieces. I am giving you the reference. It seems to come from Majorca dialect.
