Not sure this should be under Spanish as it´s a Basque term. It´s apparently the "papada" of the fish, in this case cod. I can hardly put "cod chin". Any suggestions?

Explanation:
Hi Maureen,

Incidentally, correct Basque spelling is kokotxas, with an 'x', not 'ch'.

Quite honestly, if in Spain we don't translate it - and Basque is not even remotely related to Spanish - I don't see why you should translate it into English.

Personally, I would leave it in Basque and if the text leaves room or requires an explanation, then I would add it. The piece is not actually the cheek, since it is taken from the inner side of the lower jaw, although since this is a more widely accepted explanation, you might want to keep it. If you have more room I would be a little more precise.

Generally this is one of the most tender parts of any fish, not just hake or cod, as any fish lover will know. However, only larger fish would allow for kokotxas large enough to separate and cook apart from the rest of the animal and of these hake (young cod) is one of the most delicate in taste.

Names only become accepted as they become known. Try to dig up the first translations people made of paella...I wonder what they came up with!

Unbelievable...I was just over on Cape Cod and had these....it's the cheeks of cod..and they are delicious...papadas...

the menu said: FRIED CHEEKS

and I have never seen that before...I have just learnt the term

  -> No Kit. I went to Cape Cod and the menu said: "Fried Cheeks"...everybody on the Rhode Island and Massachusetts coast knows what it means...I didn't before I asked. Here, they just say cheeks...do you live in a place that has these fresh out of the sea?
