"All-purpose flour is made from a blend of high- and low-gluten wheats, and has a bit less protein than bread flour — 11% or 12% vs. 13% or 14%. You can always substitute all-purpose flour for bread flour, although your results may not be as glorious as you had hoped.

What is bread flour? Can I substitute all-purpose flour?
Bread flour is a high-protein flour, specially formulated for making yeast breads. The combination of protein, a tiny bit of malted barley to help the yeast, and vitamin C or potassium bromate to help the formation of the gluten, helps the dough rise and retain gasses as it bakes, resulting in greater volume and better texture.

You can certainly substitute all-purpose flour in a recipe, but the results will be less spectacular. If you have a box of wheat gluten handy, you can add a tablespoon or so to your bread recipe to get essentially the same results as if you had used the bread flour.

All-purpose flour - household flour
"I am assuming from Elizabeth David's description that our all-purpose white flour (unbleached?), though slightly higher in gluten content than British "ordinary plain household flour", would do just fine for this recipe. (BTW, I like using half unbleached all-purpose flour and half cake flour (Softasilk brand, and always bleached) for shortbread cookies."

all-purpose flour
finomliszt

Explanation:
Ez a magyar "all purpose flour".

neutral  Attila Széphegyi: Fine flour illetve BL-55 mit jelent?
