Buonasera a tutti. Sto traducendo un libro di ricette inglese>italiano e devo fare la conversione da cup, tbsp a ml o g etc. Ma se in un ingrediente vengono riportati due pesi come ad esempio "2 o 3 oz of cheddar", e nella traduzione sono 56 e 85 g., devo riportarli entrambi anche se la differenza tra un peso e l'altro è abissale? Oppure fare una media tra i due pesi sommandoli e dividendoli per due? Come avete ben capito, mi sto trovando in difficoltà ed ogni aiuto e consiglio e ben accetto.... See more

In un caso come questo, ogni conversione dovrebbe essere di responsabilità dell'autore della ricetta: convertire da misure volumetriche imprecise come sono le tazze, cucchiai ecc. usati nelle ricette americane, a misure in grammi dipende da troppi fattori (per es.: un conto è il peso di una tazza di farina settacciata, un conto diverso uello della stessa tazza, ma presa da farina non setacciata...) senza contare la differnza tra tazza rasa o colma, o la differenza di peso tra una farina macinata più o meno fine. Non per niente, nei libri di cucina professionali americani le misure vengono date a peso, e non per tazze, ecc., come nei libri di cucina per il pubblico.

Convertire automaticamente, senza aver assaggiato la ricetta originale, e senza aver provato a cucinarla rischia di portare a risultati inattesi e indesiderati.

Per rispondere alla tua domanda più specifica: io manterrei le due misure, ma arrotondando ai dieci grammi più vicini, quindi "da 60 a 90 gr di cheddar".

Chiedi all'editor del libro come devi comportarti, facendo qualche esempio pratico. E... buon senso, a volte quello risolve molte cose (per esempio, se si tratta di cospargere di parmigiano le lasagne prima di infornarle: va benissimo scrivere 3 o 4 cucchiaiate, anche se la differenza è notevole, mentre in altri punti bisogna essere precisi).

In defense of American recipes, the volume units like cup and teaspoon are usually intended to be precise and have exact metric equivalents. These are not household cups and spoons, but specific measuring cups and spoons that are meant to be read "level" not "heaping." Also see Cup (unit). But it sounds like the OP's problem is a stylistic one, not a mathematical conversion one. For cheese, it does sound silly getting down to the individual gram, but in order to translate the range faithfully, you do have to suggest 2 numbers. How much rounding off of the numbers or whether you choose a different expression altogether like "handful" is a matter of editorial style and may indeed affect the cooked results so I wouldn't do it casually. Figure out your best solution for these instances and consult with the editor/author. By the way, I've never been satisfied trying to use US recipes here in Italy. Aside from the conversions... nothing is the same: the butter seems less "wet," the flour has a different protein content, the chocolate chips are smaller, the leavening agents aren't quite the same, sugar doesn't come in all the forms I'm used to, and even the bakeware sizes and shapes are different. When in Rome...
